Gluten-Free Novelty: Fonio
Fonio is an ancient African grain (likewise teff) gluten-free, rich in fiber, iron and zinc, which we have used to produce our artisanal Italian dried pasta, without additives and with low glycemic index.
Fonio is a tiny white grain, excellent for couscous, vegetables stuffing or vegan burger. Fonio’s texture is between quinoa and couscous, it has a delicate nutty flavor and it is an extremelly versatile healthy ingredient for any of your recipes.
The nutritional properties of Fonio are outstanding - rich in antioxidants including flavonoids, with anti-aging effects, it also contains iron, zinc, magnesium, phosphorus and B vitamins. In addition, Fonio has a low glycemic index and it is rich in fiber, which slow the absorption of sugars and fats in the blood.
By using the Fonio Obà flour, which we mill in Italy, we have made two absolutely innovative pastas: produced with only water and flour, bronze drawn and slow drying, to preserve their nutritional content and fragrance of taste.
As you can already see it from its color, Fonio Obà pasta is not translucent as many industrial yellow corn pastas, but it has its own texture thanks to the whole and unrefined flour. The results is a rustic flavor that, actually, has nothing to envy to the wheat pasta.
As a matter of fact, our Fonio pasta is unique, tasty, very light and digestible with an excellent cooking resistance hence, never sticking, is perfect for pasta salads.
