Fonio, Digitaria Exilis, almost unknown in the Western Countries is one of the oldest grains in the world. Cultivated in West Africa for over 5,000 years, where it has been a staple food. Native to the rural areas of Senegal, Burkina Faso, Mali e Ghana, it has become expression of the best culinary local tradition.
ORGANIC BY NATURE
The tiny seed of Fonio (1.0-1.5mm) belongs to the family of another valuable grain, the Millet. Fonio is organic by definition since the plant produces itself anti-parasitic substances, so it does not require further chimical treatment. It is ready to harvest in 6-8 weeks, drought resistant and it tolerates poor and sandy soil with little water, thriving where nothing else will grow, requiring no treatment with pesticides or herbicides.

Fonio is a precious grain perfect for a healthy and balanced diet. It is gluten-free, rich in protein and essential amino acids, source of fibre, B-vitamins and minerals (iron, magnesium, zinc, phosphorus). High digestibility and low glycemic index make it ideal for consumers of all ages, starting from our kids.
HOW TO ENJOY IT
You can use it for your salads, for example instead of Quinoa and Farro, or in any recipe with fish or meat. It is great for delicious vegan burger or croquettes and as stuffing for vegetables instead of bread and meat. Our flour is great for all the baked goods, cookies, cakes and breads.

HOW TO PREPARE A COUS COUS OF FONIO OBA’
1. Pour 100 gr of grains into a pan;
2. Toast for 2 minutes adding some oil and a bit of salt;
3. Add 2 times the grains’ weight of hot water;
4. Cook and stir for maximum 1 minute till water is absorbed;
5. Pour into a plate and fluff the cooked fonio with a fork before serving
